What do you know about the tomato? Many say that the tomato might just be one of the healthiest food choices we have. The tomato contains a good source of lycopene, vitamin A and Vitamin C to name a few benefits. The fact that this fruit….yes the tomato is a fruit, is so healthy I might have to start including the tomato into my diet more often. Also, cooking the tomato enhances the antioxidant activity in tomatoes according to a study at Cornell. How about some recipes?

Our tomatoes here in Florida were just recalled for salmonella, reminding I hope many that it’s not so hard to grow your own and WORTH IT! One of my favorite ways to eat a traditional beefsteak tomato: sliced thick, braised in olive oil with a smidge of butter, and topped with a fried egg, sunny side up, with freshly ground pepper, sea salt, and a little feta. Add a thick slice of toast made from homemade bread and what you have is one freakin’ fantastic meal! 🙂
I love beefsteak tomatoes, Tia, and that sounds like a delicious recipe. I, also, love them with just salt (I use “No Salt” actually due to blood pressure), or on a sandwich.
I will have to find some “homegrown” or wait for the ban to be over. No Salmonella for me.
